Athens Meze Cooking Class: Seven Small Plates and Phyllo
Meze is Greek food built for sharing: a table covered in small plates that everyone reaches into at once. The class makes seven of them, in one evening.
The work is done in pairs, which keeps it social rather than instructional. One of the seven involves making phyllo pastry from scratch and shaping it, which is the part most people have never attempted and the reason the technique is worth learning here rather than reading about.
When the cooking is done the table is laid with everything at once, the way it would be at home, with plenty of Greek wine and soft drinks alongside.
The studio is a converted loft in the centre, on the fifth floor at Evripidou 90, bright, with the Acropolis visible from it.
Three hours, in English, up to ten people. You leave with the recipes for all seven dishes. Vegetarian and vegan menus can be arranged with notice, and the operator will discuss a different start time or a private class if you ask.

Seven meze dishes and handmade phyllo
The group meets the instructor in the central Athens studio and goes through the tradition of meze, small dishes meant to be shared. Everyone works in pairs. The class makes seven meze dishes from scratch with fresh ingredients, herbs, spices and olive oil. It starts with traditional phyllo made entirely by hand: mixing and kneading the dough, rolling it paper-thin, then shaping cheese pies. Dishes such as tzatziki, dolmades, baked peppers, eggplant rolls and soutzoukakia follow, then a syrupy dessert. The instructor demonstrates each technique step by step. No cooking experience is needed. The group then sits down to eat all seven dishes, with Greek wine, soft drinks and water. Recipes are emailed after the class.
