Cooking with Two Chefs from Maido, in Their Own Kitchen
Most cooking classes in Lima are taught by cooks. This one is taught by the people who ran the kitchen of a restaurant that reached the top of the World's 50 Best list.
Hector Aguilar was the creative chef at Maido; Jose Aguilar is its chef de cuisine. Both have worked in serious kitchens abroad. The operator makes the argument bluntly on the booking page: you can save twenty dollars and be taught by somebody straight out of school, or you can be taught by these two.
What that changes in practice is not the recipes but the reasoning. A chef at that level explains why a technique exists, what it is doing to the ingredient, and what happens if you get it wrong, which is the difference between following a recipe and being able to cook.
Three hours. A pisco sour class, the recipes of the day, and lunch or dinner, which is what you made.
Up to fifteen people, in English or Spanish. Intolerances and allergies can be catered for. Children need an adult with them.
Ask if you need help arranging transport and they will sort it.
