Three Recipes, One Workstation Each, in a Cesarina's Home

Three hours in a Neapolitan home cook's own kitchen, private to your group, learning three regional recipes from someone who cooks them for their family rather than for a class list.

Every participant gets a workstation with its own utensils and its own ingredients, which sounds like a detail until you have stood behind two other people waiting for the rolling pin. You do the work; the host corrects it as you go, and the corrections are the tricks that never make it into a written recipe.

Then everyone sits down to eat all three dishes, with a selection of local reds and whites, water and coffee.
