Laila's introduction to her own class is two sentences long, and the numbers in it are the reason to book.

Thirty years cooking for guest houses and hotels in Marrakech. Twelve of them teaching visitors. That is a career in riad kitchens, which is a specific and demanding kind of cooking: small, seasonal, and expected to be perfect for people who have paid for perfect.

Four hours, hands on.

The meeting point is by the Bahia Palace, off Riad Zitoun el Jdid, which is one of the more navigable corners of the Medina and a good place to be afterwards.

Up to twenty people, in English, French or Arabic, with water and tea or coffee.

Prams are fine and infant seats are available.

What's included

  • Bottled water
  • Coffee and/or Tea

  1. J2C8+R5R, 3 Rue Riad Zitoun el Jdid, Marrakesh

The meeting point is next to the prefecture on Riad Zitoun Jdid, by the Bahia parking and the Bahia Palace.

  2. Market, spice shop and cooking at home

At the starting point the group meets Laila and chooses the dishes to cook. A visit to the nearby local market for fresh vegetables and ingredients comes next, then a spice shop, where Moroccan spices and their traditional uses are explained and anyone interested can buy their own. At Laila's home the class begins with a cup of Moroccan tea. Allergies and dietary preferences are checked first, and vegetarian and vegan options are available. The hands-on part starts with fresh Moroccan salads and simple traditional techniques for balancing flavours, followed by a traditional tagine seasoned with spices such as ras el hanout. Everything is guided step by step, and the meal is eaten together at the end.
